Hello, Health-Seeker!
On my run yesterday, I sneaked into the woods and made it to a beautiful stream and waterfall. I didn’t have time to do the entire trail, since it was already evening, but I did go far enough to be mesmerized by the water falling into the pool below.
Granted, it’s a tiny waterfall and the stream is not very much more than a trickle, but it’s nature at her best, nonetheless. I stayed there for a few minutes before turning around to go back home, and I was filled with joy and gratitude. To have such a beautiful place within a 20-minute run from home, and to be fit enough to go there and back whenever I choose, filled me with immeasurable joy. I found myself thinking, “I love my life!”
Like you, not all the moments in my life are so glowing and beautiful. I experience the frustrations of living with a teenage boy, deadlines that need to be met, and lots of responsibility.
I feel so fortunate to be at a place in my life where I can truly count my blessings, like the waterfall, and to be able to accept the less than fun parts of my life as learning and growing experiences.
Last week was particularly awesome. It was my birthday, and I was blessed with many, many greetings, showered with gifts of love, and treated to delicious food.
I also enjoyed a shopping spree with someone who knows HOW to shop and pick the right colors and textures to suit my body and style. I received a 2-hour massage, flowers, a delicious meal that I didn’t have to prepare, and 4 mini birthday treats that looked just like the “Hostess Ding Dongs!” I enjoyed as a child – only these were made with all organic, whole, fresh, low-glycemic, raw ingredients. Wow!
The grand finale of my birthday celebration is a trip to Florida to visit my son for HIS birthday. I rented a small condo with a full kitchen, right across the street from a beautiful beach, and 5 blocks away from a raw foods restaurant. I will bring my laptop and work between visits with my son, all the while taking beach breaks! I am excited beyond belief.

Tired of the expensive, low-nutrition breakfast cereals available at your grocery store?
Here’s a recipe for creating your own Granola Cereal from the above Dried and Gone to Heaven e-Book:
Crunchy Live Granola
Ingredients:
- 2 cups nuts soaked 6 hours or overnight.
- Suggestion: ½ almonds mixed with pecans, walnuts or hazelnuts
- ½ cup pitted dates, or any other dried fruit (for low-glycemic version, substitute 1 cup finely diced zucchini and 1 dropper Sweet Leaf stevia or 1/4 teaspoon green powdered stevia)
- ½ cup soaked raisins (Omit for low-glycemic version)
- ½ cup dried coconut
Directions:
- Process nuts and optional dates in food processor until coarsely chopped.
- Stir in raisins (or zucchini for low-glycemic version) and coconut.
- Adjust to desired sweetness with stevia, Lakanto, Zer, Lo Han, or xylitol
- Press together with hands and put on mesh tray of dehydrator.
- Dehydrate for 24-48 hours until crunchy.
- Store in airtight container.
Variations:
Any of the following flavorings may be added to taste.
- 1 Tbsp cinnamon
- 1 tsp vanilla
- 1/2 tsp almond extract
