I’ve got something easy, healthy, and delicious for you today. Jerusalem Salad!

Ingredients:

  • 2 – 3 handfuls cucumber, chopped
  • 2 – 3 handfuls tomato, chopped
  • 1/3 of a small red onion, chopped
  • 3 heaping tablespoons tahini sauce
  • sea salt, to taste
  • lemon juice, a drizzle to thin
  • optional: garlic, parsley, etc.
Directions:
  1. Add all ingredients to bowl.
  2. Mix well.

 

Tahini Sauce

Ingredients:
  • 1 cup raw tahini
  • 1/4 cup lemon juice
  • 1 cup water
  • 2 cloves garlic
  • 1/2 teaspoon sea salt (or to taste)
Directions:
  1. Blend all ingredients, making sure it stays thick.
  2. Pour into bowl (other seasonings can be added if desired).
  3. This will last for three or four days in your refrigerator.
