Recipe: Cacao Protein Truffles

Here is another fun and healthy recipe you can use during this Valentine’s Day season. This recipe was created by one of our Insulin Resistance Solutions Practitioner Training graduates, Andreea Fegan, of Little Bites of Joy. After you’ve made the truffles, another option is to put them into heart-shaped molds to celebrate the day of the heart.

Cacao Protein Truffles

Ingredients:

  • 2 cups walnuts
  • ¾ cup unsweetened shredded coconut
  • 2 pinches salt
  • 1/3 cup cacao powder
  • 1 scoop Sunwarrior chocolate protein powder
  • ½ tsp liquid hazelnut stevia
  • ¼ cup melted cacao butter
  • scant ¼ water
  • extra cacao powder & coconut for rolling

Directions:

  1. Combine first 6 ingredients together in a food processor.
  2. Add in the cacao butter and water and process until mixture sticks between your fingers.
  3. Roll into 1 tablespoon balls between your hands and roll in cacao powder or coconut.
  4. Refrigerate.
