Hi Ev’ryone!

It’s officially summer, my favorite time of year. It’s been sunny and hot here in Austin, and the perfect weather for my favorite activity of all…swimming and frolicking in the water.

The water is delicious and I’ve been soaking up my daily dose of Vitamin D and getting plenty of exercise. Ahhhhh!

I work with lots of people who think that just because they drink green smoothies and eat salads that they should be healthy and strong. And while I’m the last person to dispute that these are two essential ingredients for health, I recognize that there is so much more.

Fresh air and sunshine are important for Vitamin D and your circulation and respiration. I’ve been testing lots of people for Vitamin D over the past six months and it’s amazing how many are deficient. Vitamin D deficiency can contribute to depression, hormone imbalance, leaky gut, autoimmune disorders and even cancer!

Exercise is vital to good mood. Did you know that exercise beat Prozac as an anti-depressant in many studies? Really! It costs a lot less, too and has fewer side effects.

The other important component to vibrant health is your attitude. It’s hard to be healthy when you’re annoyed that you have to give up your favorite “bad” foods in favor of greens. It’s challenging to consistently make healthy choices that bring you closer to your goals what you’re not connected to your goals. My newly revised “Vibrant Health Mindset Success System” is a powerful process that provides you with the tools you need to easily and joyfully make choices consistent with health. It addresses emotional eating, binging, stress, and self sabotage so you can stay on path long term.

And she and I have put together a program called “The Secrets to Being Se*xy and Vibrant at Any Age” to address solutions to the imbalances that create premature aging, fatigue and loss of libido. Earlier in the month we had the privilege of hearing Dr. Brian Clement speak about cancer and serious illnesses and how we can make diet and lifestyle choices that keep us healthy. I very much enjoyed Dr. Clement’s talk and learned some new things myself. For example, I had no idea that Reverse Osmosis water was less effective than distilled for removing prescription drugs. That was an eye opener. You better believe I’ll be doing some research to see if I come to the same conclusion.

Several of Dr. Clements comments caused a flood of email into my box. In particular were his opinions about Green Smoothies and fruit.

 Kelp

Magic from the Sea to Combat Adrenal and Thyroid Fatigue

KelpKelp is a great food for adrenal fatigue, thyroid balance and detoxification. Who’d of thought—back in the days when I was first learning to scuba dive in the thick kelp forests in northern California—that someday I’d be eating the slimy stuff?

Now that I know that kelp is one of the most nutritious foods around, I eat it on a regular basis. Only I don’t eat it in it’s slimy state. Usually it’s ground up as a powder or dried into long crunchy chip-like pieces.

My favorite kelp of all is called bullwhip kelp. It grows in the moving cold waters of the Pacific Northwest. When sun dried and carefully packed, it is crispy and light, salty and delicious. Kids love it.

Another form of kelp is called Laminaria Digitata. Say that 10 times fast! The claim to fame of Laminaria Digitata is its effect on thyroid function. 10% of the iodine in Laminaria digitata Kelp is T3 and T4, the nickname for your thyroid hormones. I’ve seen people reverse abnormal thyroid lab tests in 6-8 weeks by taking laminaria digitata.

Summer Fruit Pies

Pie Crust:

  • 2 cups almonds, soaked for 6 hours or overnight
  • 1 cup pecans soaked for 4 hours
  • ½ cup pitted dates
  • 1 cup dried coconut

Process all in food processor until it holds together.
Press crust mixture into glass pie dishes.  This made one 7 inch and 1 9 inch pie.

Peach Mango Pie:

  • 6 large peaches
  • 3 mangoes
  • 4 dates
  • 1 tablespoon psyllium powder (optional)

Directions

  1. Cut peaches into bite sized pieces and place in a bowl.
  2. Peel and pit mangoes and put flesh in blender with dates and psyllium.  Blend well until creamy.  Add a little water if needed.
  3. Add blended mango mixture to peaches and stir well.
  4. Pour mango mixture over peaches and stir well to combine.
  5. Place peach mango mixture in crust.  Sprinkle top with finely ground dried coconut. And decorate with sliced peaches.

Banana Coconut Cream Pie:

  • 4 bananas
  • ½ cup coconut butter (Artisana)
  • ½ cup water
  • 4 pitted dates
  • 1 teaspoon vanilla

Directions

  1. Slice 3 bananas and place in a bowl.
  2. Put 1 banana, coconut butter, dates, water and vanilla in blender and blend until creamy smooth.  Add extra water if needed.
  3. Pour mixture over bananas and stir well.
  4. Place banana coconut filling in 7 inch pie crust.
  5. Sprinkle top with coconut and vanilla, and decorate as desired.
