My 4th Favorite “F-Word” – and a Dairy/Casein-Free Parmesan Cheese Recipe!

Hello, Health-Seeker!

Greetings from my beach condo in Florida!

How lovely it would be to escape like this more often.

While I still have work to do, and this is not a “full time ” vacation, it sure does feel good to be able to slip away and get some beach time.

19 years ago today, I was blissfully gazing into the eyes of my now full-grown-man son! I remember it well. Seeing him again, after 7 weeks of not seeing him, brought back a flood of memories.

We waited a long time for his arrival, and the joy of seeing him again was almost as intense as the joy of seeing him for the first time.

Eric is in classes much of the day, but we did get to spend some time yesterday doing one of his favorite activities – eating!

He was delighted to get “real food”. I carried vegan tacos from one of his favorite Austin restaurants all the way to Florida with me...his request for his birthday present. Then we went to another of his favorites for dinner – Chipoltes. We are planning to go to an Ethiopian place for dinner for his birthday celebration. We might even bring along some of his friends!

In the meantime, I am working this morning so I can have some beach time before visiting him again.

Want dairy-free, casein-free “Parmesan Cheese” for your raw pizza?

Yes, it’s possible, with this simple recipe from the above Dried and Gone to Heaven e-Book:

“Parmesan Cheese”



Ingredients

  • 1 cup almonds
  • 1 Tbsp nutritional yeast
  • 1 tsp whole unrefined sea salt

Directions

  1. Soak almonds overnight.
  2. Spread on dehydrator trays lined with mesh and Paraflexx™ sheets (use a scant 2 cups per tray).
  3. Pulse-grind almonds with nutritional yeast and salt.
  4. Store in a jar in the refrigerator.

Variations

  • This recipe works well with sesame, hemp or pumpkin seeds.
