Oh, Marvellous! That will get added to my “eating well on the road” files as well. I’m always looking for recipes that can be made in a hotel room or car while travelling and this definitely fits the bill! So hard to get greens in while travelling unless I bring a blender or food processor along. Now it will be easy! Thank you!

I love this recipe! This is a great idea for when you need to pack your lunch, but don’t want to lug around a giant-sized cooler for the salad greens.

Great recipe! I’ve done this with cabbage and carrots, but never thought of doing it with spinach. Thanks for the great idea!

Wow Dr. Ritamarie! That looks amazing! I would never have even thought of squishing spinach down with my hands like that. It certainly makes it look like a lots less to eat in one go.

I’ll certainly be giving this a try, maybe with a garlic-salt and lemon dressing… Thanks for the great idea!

Thank you so much for the video Dr Ritamarie. It is so much clearer when you can see it. I used to put the salt and the lemon juice together before massaging…and I didn’t reduce it as much as you did. I have tons of spinach and other greens in my garden. I’m ready to experiment some more…and increase my green intake! I am already salivating thinking how good this will be tomorrow topped with my green broccoli sprouts.
